
- A very special wine produced from a field blend grown in a small, steep, rocky site on the north slopes of Mount Etna called Calderara Sottana. The vineyard is located on the oldest existing soils where it is possible to grow grapes. The extremely warm temperatures experienced here, due to the dark, rocky volcanic soil, bring out some of the most intense flavours and structure imaginable. These ancient vines, planted using traditional massal selection techniques are farmed entirely by hand. The resulting wine is fermented in open vats using only indigenous yeasts for 21 days and then aged for 24 months in large chestnut ovals and older French oak barrels. 2000 bottles were produced.
To quote the winemaker, “This wine is liquid stone, our tribute to Mount Etna.”
