Winemaking Notes: The Trebbiano grapes are manually harvested into small boxes. The grapes are destemmed, softly pressed, and transferred to stainless steel for fermentation with native yeast. The wine matures for about one year in stainless steel with about three months spent on the fine lees. The wine is bottled without fining or filtering. Total sulfites equal 40 mg/L.
Tasting Notes: Wonderful freshness shows on the palate. Flavors of honeydew melon, apple, honeysuckle, and herbs meld with crisp and mineral acidity along with a bit of citric tartness for a pleasurable sip. This is an easy drinking Italian white wine that will pair with an array of dishes (chicken, fish, light pastas, eggplant, sushi) or be excellent as an aperitif.
