Winemaking Notes: The wine is produced with selected varieties of Montepulciano grapes cultivated on young vineyards located in Atri and following the principles of organic farming. Grape harvest takes place during the last week of September and the first week of October, depending on the grapes’ complete biological ripeness, whose evaluation is based on sugar degress, pH and total sourness. Grapes are picked by hand, respecting their wholeness and those organoleptic peculiarities that will come out with the wine. Winemaking is carried out in respect of tradition and observing the most up-to-date rose winemaking methods. Grapes are selected and derasped, keeping the skins in contact with the must at a temperature of about 8-10 Celsius for 10-12 hours. This process helps the extraction of the skins’ noble elements that will bring wine’s personalities. The so called flower must obtained from the skins’ separation is then decanted. Selected yeasts are added and a fermentation is performed at a temperature of about 15 Celsius. The obtained wine is quickly separated from its dregs and preserved at a temperature of about 12 Celsius until it is ready to be bottled. The rules required by regulations for organic wine production are observed during all stages, in order to assure and protect the wine’s genuineness and healthiness.

Tasting Notes: Deep red in color with a pleasantly fruity bouquet. The flavor is fresh and sapid, well-bodied and persistent. Will pair perfectly with salami, soft cheeses and main courses.Cirelli
